Jalapeno blisters... =(

So... I am dumb. Ya, ok.

Note to self ~ DON'T DICE JALAPENOS WITH BARE HANDS! But I have before and never had a problem! Whaaaaaaa's up with that? Ugh.
I decided to make Deneighs Creamy Chicken Burittos for dinner, which required chopping of said evil jalapenos. And I must say, it was SO worth it!
Travis said, (as he took his second bite) "Mom, we don't NEED a good Mexican food resteraunt here... we have YOU!!!" Ya, my mom taught me well! I am a dang good cook, thanks to her! And amazing recipes from OTHER amazing cooks, like Deneigh! These are a must try, and a dish that I will be making quite often, you can be sure! Delish! And super duper easy as well. I shall share...

DENEIGHS Creamy Chicken Burritos

3 chicken breasts
2 cans rotel
1/4 packet taco seasoning

Put these in crock pot and cook on low 3 hours. Take chicken out and shred. Return to crock pot and mix. Make burritos by placing heaping spoonfuls of chicken mixture on flour tortillas. Top with shredded Monteray Jack Cheese. This is a MUST!

Roll up. Line up in sprayed 9x13 glass baking dish. Make the jalapeno cream sauce:
1/2 c. heavy whipping cream
2 jalapenos, finely diced (with a gas mask and gloves!)
1/2 c. sour cream
1 c. shredded monteray jack cheese

Heat together until cheese is melted. Pour sauce over burritos. Bake @350 for 20 minutes.

I make a teeny addition to the sauce... I charred 2 pablano chiles, put them in a bag to sweat, peeled and diced them. They add a wonderful flavor.

I'm BAAAACK!

So... it has been almost a year since i blogged! Holy Hannah... I am so ashamed! But I have the inspiration of my AMAZING nieces that blog to kick my rear~end into gear! Deneigh, Lynn, Jade, Annie and Kelene... keep blogging!




So much has gone on in the past 10 months! But the MOST excitement is the pending arrival of our grand~daughter, Serenity Redd Wilcox! Lillia is due in 4 weeks and we are BEYOND excited to meet her!




Jim also started a new job at ConocoPhillips. He is in a Supervisory position and is the BEST boss, I am positive! Best of all, NO MORE TRAVEL! This makes me very happy indeed! We are still newlyweds, afterall! =)

I finally got fed up with the pain in my hip and mustered up the courage to have surgery. It has been 11 days and I am feeling pretty good. Still "hobbling" around more than makes me happy, but I am not the most patient patient! I am 43 years old with the heart of a 25 year old and the body of a 65 year old!!! Ghaaaaaa! I don't like it! Patience, me... patience...

Run Bambi, RUN!

Unfortunately, we didn't get anything this week, but we have RIFLE season coming up in just a few weeks! Jim is so antsy, he can hardly wait! His nephew Brian is coming with his little family, the boys will hunt and Mary and the girls and I will shop!

Ya, wow... I have never lived where there are ACTUAL seasons! The leaves here have been incredible, every fall color imaginable. There is a walkway called Pathfinder here in Bartlesville, it is over 13 miles long and just winds around through the town and woods. We spot deer quite often and just love enjoying the beauty of the surroundings that Heavenly Father has given us! Roxy and Kimber think they are in HEAVEN when we take them!

Mom and Falene were here the end of October and we had so much fun! We went to the zoo before taking Falene to the airport, the weather was amazing and the animals were all out lazing around in the sun!

We miss Arizona and family...


... so I decided to start a blog! Nay and Jade are my inspiration, I am always so excited to see what is going on with them! I hope to better keep in touch with everyone and keep you up on our lives here in Oklahoma!
